I decided to cook my way through a cookbook with 300 Calorie Dinners

I asked each of my grandchildren if they wanted me thin. They all said "Yes!" One of the girls asked,"Can you do that?" I said, "Yes." She then said," How can you do that?" I replied, "Diet and Exercise." So now I'm stuck doing something about it.

My mind is located in a body of most of my years very thin. Thanks to blood pressure and possibly menopause, not so much now.

So I see this book for 300 calorie dinners and think after seeing the photos of some pretty good recipes, I buy it. It was at a 5 below store. I have wanted to use up many of the items taking up way too much real estate in my cupboards.

My husband is the recipient of many extremely good meals. We had moved to a desert in terms of fine restaurants. Maybe some are good, but the fast food overpopulates the restaurants that are trying to reach the propler audiences. Many people told us of a fine French restaurant that had just closed right before we moved here.

 

So the first recipe I tried was a Salmon with Tzaziki Sauce.

3/4 c. Cucumber chopped how you may like the bites.

Total of 3/4 t. salt for 3 additions in directions.

1 c. plain Greek yogurt

2 T. lemon juice

the grated peel of one lemon and try not to scrape your fingers grating

1 t. of garlic. always better fresh but the tubes of ready to go are just fine for this

1/4 t. pepper. I like fresh ground pepper but I get tired twisting those mills

4 salmon filets

Place cucumber on paper towel and sprinkle with 1/4 t. salt

For the Tzaziki Sauce, stir together yogurt, only 1 T. lemon juice, 1/2 t. lemon peel,

1/2 t. garlic,and 1/4 t. salt and pepper in bowl and after mixing rub this mixture into

the salmon as evenly as you can. This just makes every bite taste the same. You can always be a glopper in the middle kind of cook and one bite is plain and another bite is over the top in flavor, your choice!

Okay now here is the question.....how do you want to cook your salmon?

One choice is wrapped in foil in oven 425 for 15-25 minutes  depending on thickness

Another choice is a non stick grill on the stove medium heat for 5-7 minutes on each side.

I decided to break out the Nuwave pot thingee I got at Home Depot. They were shoved in our faces at the front of the store. It sats for ages in the various places i do not have room for in my kitchen. I decided to use it for this purpose. It is a simple to operate bread machine looking kind of appliance. I cooked the salmon according to the directions for fish on the top of the Nuwave. It was indicated by the fish and gives the tempurature and the time right on top of the appliance! 

Alright, now after I decided I didn't want to go to the store in freezing tempuratures for cucumbers (I had missed many opportunities to use cucumbers that had become limp science experiments in the vegetable drawer) I used sweet relish instead. This is just a glorified cucumber type tartar sauce and relish is made from cucumbers anyway. It was good to the taste test but need some punch so I also added cayenne pepper. 1-5 shakes of the container. Taste after you have mixed 3. Wait for a few seconds to see if it kicks in. Cayenne pepper is funny like that. It likes to act like there is no spice and then whoa!!!!!!!!!! it kicks in. The next day when I went to the store I got some more cucumbers in order to make it again but a little more true to the Greek sauce. I had three jars of relish and was happy to use some of it up.

I have that much relish in order to make thousand island dressing which is relish, ketchup and mayo. I just didn't get to it yet. 

We had this salmon and it was something that would get repeated in our cycle of dinners. 

This is the cycle, Husband before he leaves for work, "What should we have for dinner?"

Wife response varies from silence to many colorful phrases as it is usually asked way before any kind of coffee or tea or even breakfast has set in.

This is around 243 calories. At least that is what the book says. It serves 4 (maybe)

You will be happy to hear that due to the fact that it is salmon there is 2g of saturated fat and a total of 12grams of fat each serving I suppose. For peace of mind though, there is 29g of protein and a whopping 508 mg of sodium due to yogurts high content and the fish. 

 

 

So maybe you would like to have a refreshing drink, No dairy, No sugar, no added chemicals.

One can Lite Coconut milk.....no chemicals in can but coconut milk in dairy case has added ingredients.

One bag of frozen Dark Sweet Cherries. No additives here either and they are sweet.

Well, for flavor add a little pure Almond extract. If the cherries arent very sweet a teaspoon of honey.

Put this in blender and it is a really filling drink.

I am pleased to say my daughter made this up!  

 

Obviously, I have seen the movie Julie, Julia. I have come from 3 generations of Home Economics people.

In the first scene where her husband and her are eating at a french restaureant and they just die over a fish entree. Well, I found the recipe......Of course!!!!!! 2 sticks of butter!!!!!

 

Anyway, it is such a simple recipe, just take a white fish (orange roughy or trout etc) be sure to dry it with a paper towel and salt and pepper and flour them. They will brown very nicely in your huge amount of butter that you melted in a fry pan. After browning, take them out and put them in a glass casserole or other dish more formal. Then in her recipe she just pours the butter over the fish and then serves. I added maybe 2 Tablespoons of Amaretto and Limoncello to the butter and thickened the sauce a little and then I drizzled it over the fish. Most all people including people who hate fish really like this particular way of preparation. White fish takes maybe 5-7 minutes to cook. However, if you don't ever cook fish then they just tell you it is done when it flakes.
